Butcher Waste and Mortality Composting

Disposal of offal and butcher waste is becoming increasingly difficult and expensive as renderers close. Routine and emergency losses of poultry and livestock are significant environmental, biosecurity, and waste management concerns. Composting is cost effective, environmentally sound, compassionate, easy to do, and can be done at any time of the year. This presentation will cover what composting is, site preparation, and how to compost livestock on farms and butcher waste, including the regulations in New York State.
Jean Bonhotal, Waste Management Specialist and Director of the Cornell Waste Management Institute in Soil and Crop Sciences has spent over 25 years in education of composting food, manure, animal carcasses, along with compost quality and use. She will cover regulations and required permits, if needed.
Jonathan Hunt, Greener Pastures Composting, will talk briefly about his experiences starting his composting operation.
Please join us at this workshop for farmers and meat processors.
